Grandma's Whole Wheat Pancakes


1 ½ cup of whole wheat flour

¼ c cornmeal

½ tsp baking powder

½ tsp baking soda

1/2 tsp cinnamon

1 tsp. of lemon juice

1-2 TB olive or canola oil

Combine dry, then add liquid with enough water or milk to achieve desired consistency. (might need to add more after batter sits for a few minutes as it tends to thicken) Blend and cook on a lightly sprayed preheated skillet. Turn over when edges look dry and center bubbly then cook until done.

Serves 4
